We used an isomalt-sweetened nut meringue, the best butter we could get our hands on to make a luscious French buttercream filling, and swapped those cookie crumbs for toasted cashews to make this treat absolutely sugarfree and gluten-free. 

FAT, CRISPY and CHUNKY. The way it should be!
